EDEM 3500 - Event Catering Operations

Study of event catering, including operations, menu development, responsible alcohol service, sales, and relationships with other departments and outside vendors. Emphasis placed on logistical operations, seeking and servicing various market segments. A practical approach to understanding the role of catering operation in event management.
